Citrus Cupcakes

This recipe was supposed to make lemon cupcakes, but I didn’t have any lemons when I last made them, so used oranges instead. They turned out to be just as delicious (just a little sweeter than the lemon ones), and I think you could also use limes as your citrus fruit of choice (yum – lime cupcakes!).

Citrus Cupcakes – makes 12 (or 8 mini + 8 regular)

1c plain flour
3/4c caster sugar
1 1/2t baking powder
2T grated citrus zest
40g unsalted butter, at room temperature
1/2c milk
1 egg

Preheat oven to 170degC. Line desired muffin pans with paper cases.

Put the flour, sugar, baking powder, zest and butter in an electric mixer (or use a handheld electric beater) and beat on a slow speed until you get a sandy consistency and everything is combined.

Gradually pour in the milk and beat until just combined.

Add the egg and continue beating until just combined; mix until smooth but do no overmix.

Spoon the mixture into prepared pans (two-thirds full) and bake for 20-25 minutes (15 for the minis), or until the cakes bounce back when touched.

Cool in the pan for 5 minutes, then allow to cool completely on a wire rack.

Citrus Frosting*

1c icing sugar
40g unsalted butter, at room temperature
1T grated citrus zest
a couple of drops of appropriate food colouring (optional)
1T milk

Using an electric mixer/beater, beat together sugar, butter, zest and food colouring until well mixed.

Using a slower speed, slowly add in the milk. Once all the milk has been incorporated, turn the mixer/beater up to high and beat until the frosting is light and fluffy – at least 5 minutes.

Spoon** onto cold cupcakes. Decorate with extra zest…or a little grated chocolate :o)

*I have halved the original recipe for the frosting, and find I still have some left over; however, if you like to have the same amount of frosting as cupcake, by all means double this recipe!

**This frosting doesn’t hold its shape if piped, so spooning and then smoothing it on is definitely the easiest option.
