Recipe: Yo-Yos

Yo-Yos – makes 10-20, depending on the size you want these little morsels to be!

175g butter, softened
1/4c icing sugar
few drops of vanilla essence
1 1/2c plain flour
1/4 custard powder

Preheat oven to 180degC.

Cream butter and icing sugar until light and fluffy; add vanilla and beat again.

Sift flour and custard powder together; mix into the creamed mixture and stir until well-combined (if the mixture resembles breadcrumbs, use your hands to bind everything together completely).

Roll teaspoonfuls of the mixture into balls – make sure you roll an even number. Place on a baking tray and flatten with a fork; bake for 15-20mins.

When cold, sandwich two biscuits together with butter filling.

Butter filling:
50g butter, softened
1/2c icing sugar
2T custard powder

Beat all ingredients together until well combined.

  1. How are you with macarons? Not quite yo-yos, but just as cute.

  2. I’ve not yet tried to make macarons…they scare me a little for some odd reason. But lemon meringue pie macarons?? Creme brulee macarons?? I am DEFINITELY going to get over my irrational fear of making these little treats now!! The gingerbread men look amazing – do it!! Thanks so much for sharing the link…now let me just wipe the drool off my keyboard…
